Mini Green Bean Casserole

Ingredients:

2 cans (14.5 oz each) green beans, drained
1 can (10 3/4 oz) cream of mushroom soup
1 clove garlic, finely chopped
1/2 teaspoon crushed red pepper flakes
1/2 cup French-fried onions

Directions:

1Heat oven to 350°F. Spray 4 (7- or 8-oz) individual baking dishes (ramekins) with cooking spray.2In large bowl, mix green beans, soup, garlic and pepper flakes. Divide mixture evenly among baking dishes. Top with onions.3Bake uncovered 20 minutes or until bubbly and onions are golden brown.

Beef Roast Stroganoff

Ingredients (roast):

3-5 lb. beef roast
1 C. water
1/2 pkg. dry onion soup mix

Ingredients (sauce):

2 cans cream of mushroom soup
1/2 C. sour cream (opt.)
2 tsp. beef bouillon
1/4 tsp. pepper

All of the broth left over from the crockpot

Directions:

Place roast in crockpot. Mix water and onion soup mix and pour over the top of roast.

Water does not need to cover the roast. Cook on low for 8 hours or high for 4 hours. When roast is done, take out of crockpot and shred meat; set aside.

In a saucepan, combine cream of mushroom soup, sour cream (if desired), bouillon, pepper, and the leftover broth from the crockpot. Bring to a boil. Add shredded beef.

Serve over egg noodles or potatoes.

Hobo Casserole

Ingredients:

1 lb. hamburger
1 small onion
2 medium potatoes, sliced
4 slices American cheese
1 (10 3/4 oz) can cream of mushroom soup
1/8 cup milk
1 1/2 cups french fried onions
salt and pepper, to taste

Directions:

Preheat oven to 350.

Cook hamburger meat until done. Pat ground beef into 8x8 pan and sprinkle with salt and pepper. Slice onions and put on top of beef. Slice potatoes onto onion layer, salt and pepper. Layer with cheese slices. 

Mix soup and milk together and spread over cheese. Cover with aluminium foil and bake for 1 to 1 1/2 hours or until potatoes are tender.

Remove foil and top with french fried onions and brown for 5 minutes.

Chicken & Broccoli Alfredo

Ingredients:

1/2 of 1lb package linguine
1 cup fresh broccoli
2 tablespoons butter
1 1/4 lb skinless, boneless chicken breast cut into 1 1/2 inch pieces
1 can cream of mushroom soup
1/2 cup milk
1/2 cup grated Parmesan cheese
1/4 teaspoon black pepper

Directions:

1. Prepare linguine according to package directions in saucepan. Add broccoli during last 4 minutes of cooking time. Drain linguine mixture.
2. Heat butter in skillet over medium-high heat. Add chicken and cook until well browned and cook through, stirring often.
3. Stir soup, milk, cheese, black pepper, linguine mixture, and chicken in pot and heat until mixture is hot, stirring occasionally. Serve with additional Parmesan cheese.

** I boiled my chicken until almost cooked while I was boiling the noodles, then took out and cut into chunks, and then cooked in butter until browned. **

Chicken Spaghetti

Ingredients:

8 oz spaghetti noodles
2 cups chopped chicken or 1 large can
1 can cream of mushroom soup
1 can cream of chicken soup
1 (10oz) can rotel
8 oz sour cream
Sprinkling of shredded cheese of choice

Directions:

Preheat oven to 350.
Boil pasta as package directs and drain. Mix all ingredients (except cheese), add to cooked pasta and put it in 9x13 baking dish. Cover with foil and bake for 30 minutes or until hot and bubbly. Sprinkle with your choice of cheese and retune to oven to melt.

No Peek Beef Tips

Ingredients:

2 on beef tenderloin tips, stew meat, chuck roast; cubed
1 (10.5oz) can cream of mushroom
1 packet brown gravy mix
1 packet dry onion soup mix
1 (4oz) can mushrooms
1 cup water

Directions:

Add cubed meat to a 9x13 pan. In a big bowl mix the remaining ingredients together and pour over the meat and sir to coat.

Cover with foil and bake at 300 degrees for 3 hours (do NOT remove foil) until done. Serve over rice, mashed potatoes or noodles.

Crockpot Cube Steak & Gravy

Despite the appearance it was REALLY great!

Ingredients:
Cube steak   (I used a family size pack)
2 cans (10.75 ounce size) cream of mushroom soup
1 envelope onion soup mix
3/4  cup water
Directions:
Place all ingredients in a crock pot. Cook on low all day. Serve over rice, noodles, mashed potatoes or with your favorite side dishes.
Salt & Pepper to taste.
