Homemade Steak Seasoning

Ingredients:

½ cup Paprika
¼ cup Kosher Salt
¼ cup Sugar
¼ cup Cumin
¼ cup Granulated Garlic
¼ cup Chili Powder
2 tablespoons Mustard Powder
2 tablespoons Ground Black Pepper
2 tablespoons Cayenne Pepper

Instructions:

In a medium bowl, combine all the ingredients and gently whisk together. Using a funnel, spoon the mixture into 4oz mason jars. Cover and seal.
Rub steaks with Olive Oil then, generously coat with Magic Dust Seasoning. Marinate 1 hour before grilling

Smoked Chicken Rub

Ingredients

2 tablespoons paprika
2 tablespoons chili powder
1 tablespoon thyme
1 tablespoon garlic powder
1 tablespoon onion powder
2 tablespoons cayenne
1 tablespoon salt
2 tablespoon black pepper

Directions

This recipe should be seen as a base and can be tweaked depending on your liking. For instance, if you like a little more kick to your chicken, feel free to add a little more chili powder and cayenne to give it some heat. It can be simply made by combining all of the ingredients in a large mixing bowl. It can also easily be combined with a ¼ to a ½ cup of olive oil if you want to turn it into a paste so it will stick to your chicken. Rub it on any cut of chicken from wings, breasts, thighs or legs.

Onion Soup Mix

Ingredients:

2 1/2 tablespoons dried minced onion
4 cubes beef bouillon, crumbled
1 teaspoon onion powder
1/8 teaspoon salt
1/8 teaspoon ground black pepper

Directions:

Mix together and use as needed. Makes am out of onion soup mix package.

Taco Seasoning


Ingredients:

  • 1 tablespoon chili powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon crushed red pepper flakes
  • ¼ teaspoon dried oregano
  • ½ teaspoon paprika
  • 1½ teaspoons ground cumin
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
Instructions:

  1. In a small bowl, mix together chili powder, garlic powder, onion powder, red pepper flakes, oregano, paprika, cumin, salt and pepper. Store in an airtight container. Season to taste.

**Notes**
I like to make 3 or 4 times what the recipe calls for so I can season to taste and save some in a jar for next time. For 1lb of ground beef, I added 2 TBSP of the taco seasoning mix and it was just the right amount of flavor and kick.

Oven Roasted Sausage, Potatoes, and Peppers

Ingredients:

1 package (at least 1lb) of your favorite sausage (smoked sausage)
4-5 decent sized potatoes
1 small jar of banana peppers
1-2 bell peppers, sliced
1 large onion, sliced
3 tbsp olive oil
Salt & Pepper
Optional - Creole seasoning

Directions:

1. Spray a large baking pan with non-stick cooking spray (I used a cookie sheet)
2. Slice sausages into thin rounds
3. Cut potatoes into 1/2 inch chunks.
4. Slice onion and bell pepper into strips.
5. Place all ingredients in large bowl and drizzle olive oil over and toss to coat them.
6. Add salt, pepper, and spices.
7. Top with sliced banana peppers.
8. Bake at 400 for 30-35 minutes, until potatoes are tender.

Vegan Tomato Salad with Cucumber, Avocado, Cilantro and Lime


(Makes 2 servings)

6 medium tomatoes, diced into bite-sized pieces (about 2 cups diced tomatoes)
2 medium cucumbers, diced into bite-sized pieces (about 1 cup diced cucumber)
1 avocado, diced into bite-sized pieces
1 cup chopped cilantro (use more or less to taste)
1 T + 2 T fresh squeezed lime juice
1 T best quality extra virgin olive oil
1/4 tsp. Spike seasoning (optional, but good)
salt to taste (I used Vege-Sal, but sea salt would be great here)

Peel avocado and cut into 1/2 inch pieces (I use this method for peeling and cutting an avocado.) Put avocado pieces into plastic or glass bowl and toss with 1 T lime juice. Season generously with salt.

Chop tomatoes, cucumbers, and cilantro and add to avocado in bowl. Whisk together 2 T lime juice and 1 T olive oil (with Spike seasoning if using) then stir gently into salad. Serve immediately. This doesn't keep well, so only make as much as will be eaten right away.
