Smothered Chicken

Ingredients:

4 boneless chicken breasts
1 tablespoon olive oil
1 large onion
1 large green bell pepper
1 cup sliced mushrooms
1 clove garlic
1 teaspoon Italian seasoning
Salt & pepper to taste
1 tablespoon dijon mustard
1/2 cup shredded mozzarella cheese

Directions:

Grill chicken until cook thoroughly.
Heat oven to 350 degrees.

Warm olive oil in pan, cook onion, bell peppers, and mushrooms until soft. Add in garlic and Italian seasoning and mix together and set aside.

Slice up chicken breasts and place in bottom of 8x8 baking dish. Spread dijon mustard across the chicken. Top with cooked vegetables and then add on mozzarella cheese.

Bake for 10 minutes until cheese is bubbly and melted.

Easy Cheeseburger Casserole

Ingredients:

2 cups (6 oz) Penne Pasta
2 teaspoons of olive oil
1 onion, finely chopped
1 garlic clove, finely chopped
1 lb lean ground beef (95% lean) - or you can use ground turkey
3/4 teaspoon salt
1/2 teaspoon black pepper
28 oz diced tomatoes
2 Tablespoons Dijon Mustard
2 cups reduced fat grated cheddar cheese

Directions:

Preheat the oven to 350 degrees. Spray a 9 x 13 inch baking dish with cooking spray. In a large pot of boiling water, cook the pasta according to the package directions. Drain Well.

In a large skillet, heat the oil over medium-low heat. Add the onions and cook until soft, about 5 minutes. Stir in the garlic and cook for 30 seconds. Stir in the beef and cook until browned; season with salt and pepper. Add the diced tomatoes and mustard. Let the mixture bubble until it is slightly thickened, about 2 minutes. Season with your salt and pepper.

Put your noodles in the greased pan and pour your meat sauce on top. Slightly mix together your noodles and sauce. Cover with foil and cook for 20 minutes. Take it out of the oven and remove your foil. Add your cheese on top and stick back in the oven until the cheese is melted.  (5 to 10 minutes). Serve while it is warm.

If you decide to freeze do NOT add cheese just leave that off for now and add at time of baking.

Tuna Melts

Ingredients:

5oz tuna
1/4 cup chopped red onion
1/4 cup chopped red bell pepper
1 whole jalapeño, diced
2 whole hard boiled eggs, chopped
6 whole swert gerkins, chopped
1/3 cup mayonnaise
2 tablespoons dijon mustard
Splash of pickle juice
Salt and pepper to taste
6 whole English muffins, split
12 slices swiss cheese

Directions:

Combine tuna with onion, bell pepper, jalapeño, eggs, and gerkins. Stir in mayonnaise, dijon mustard, and pickle juice. Add salt and pepper. Taste and adjust seasonings as needed.

Preheat oven to 375 degrees.

Place English muffin halves on a large cookie sheet. Place a large spoonful of tuna salad on each of the muffin halves. Use spoon to spread/flatten. Put pan into oven for 5 minutes, then briefly remove and lay a slice of cheese on each muffin. Return to oven and turn on broiler. Watch carefully to avoid burning; bake until cheese is melted and bubbly.
Remove and serve immediately.

Baked Ham & Swiss Sandwiches

Ingredients:

1 (12 pack) of King's Hawaiian rolls
1lb deli ham, shaved
1lb swiss cheese, thinly sliced
1 1/2 sticks butter
3 tablespoons dijon mustard
1 1/2 teaspoons worchestershire sauce
3 teaspoons poppy seeds (optional)
1 onion, chopped

Directions:

Heat oven to 350. Melt butter and mix in mustard, worchestershire sauce, onion, and poppy seed.

Cut each roll in half.

In greased, lipped, pan place bottom half of rolls and spread 1/3 of the onion mixture over the bottom of the rolls followed by ham and cheese.

Place the top of the rolls and spread the remaining onion mixture over the top.

Cover and bake 15-20 minutes.
