Mexican Pizza (like Taco Bell)

Ingredients:

1 cup refried beans
2 Roma tomatoes, diced finely
2/3 c. shredded cheese
2 green onions, sliced
1/3 c. enchilada sauce
4 flour tortillas
Cooking spray

Instructions:

1. Preheat oven to 400 degrees. Grease a hot skillet or griddle with cooking spray and 'fry' the tortillas, flipping frequently so they don’t burn. You want them to get nice and crispy. Remove fried tortillas to a plate.
2. Heat the refried beans so they are warm. Place 2 tortillas on a baking sheet. Spread 1/2 cup of refried beans onto each tortilla. Place remaining tortillas on top of beans.
3. Pour half of enchilada sauce on top of each tortilla and spread around.
4. Add half of the chopped tomato on top of the sauce. Add 1/3 cup of cheese on top of each tortilla. Add half of the green onions on top of the cheese.
5. Place in oven and cook about 8-10 minutes, or until cheese is melted. Serve and enjoy!

No Bake Italian Sausage 'Calazones'

Ingredients:

8 diagonally cut slices (1/2 inch thick) French bread
Cooking spray
1 package (19.5 oz) uncooked sweet or hot Italian turkey sausage links, casings removed, crumbled
1 small green bell pepper, sliced
1 can (18 oz) Progresso™ Recipe Starters™ fire roasted tomato cooking sauce
1/2 cup shredded mozzarella or Parmesan cheese (2 oz)

Directions:

Set oven control to broil. Place bread slices on ungreased cookie sheet. Spray bread with cooking spray. Broil with tops 4 to 6 inches from heat 1 to 2 minutes or until light brown; set aside.

In 10-inch skillet, cook sausage and bell pepper over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain. Stir in cooking sauce; heat to boiling. Reduce heat; simmer uncovered 12 to 15 minutes, stirring occasionally, until thickened.

Place 2 toasted bread slices on each of 4 plates; top each with sausage mixture. Sprinkle with cheese.

Grilled Chicken and Vegetable Quesadillas

  • Ingredients:

  • 1 1/2 teaspoons paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • (6-ounce) skinless, boneless chicken breast halves
  • small onion, cut into 1/2-inch-thick slices
  • small orange bell pepper, cut into 1/2-inch-thick wedges
  • Cooking spray
  • 3 ounces Monterey Jack cheese, shredded (about 3/4 cup)
  • (6-inch) flour tortillas
  • 1/4 cup reduced-fat sour cream

Directions:


  1. 1. Preheat grill to medium-high heat.
  2. 2. Combine paprika, garlic powder, oregano, cumin, salt, and black pepper in a small bowl. Rub paprika mixture evenly over chicken; let stand 10 minutes.
  3. 3. Arrange chicken, onion, and bell pepper on grill rack coated with cooking spray. Cook vegetables 4 minutes on each side or until tender. Cook chicken 6 minutes on each side or until done. Remove chicken and vegetables from grill; coarsely chop vegetables. Let chicken stand 5 minutes; thinly slice chicken.
  4. 4. Sprinkle about 3 tablespoons cheese over half of each tortilla; divide vegetables and chicken evenly over cheese. Fold each tortilla in half over filling; lightly coat tortillas with cooking spray.
  5. 5. Heat a large nonstick skillet over medium heat. Place 2 quesadillas in pan; cook 2 to 3 minutes on each side or until cheese melts and tortillas are lightly browned. Repeat procedure with remaining 2 quesadillas. Cut each quesadilla into 2 wedges; serve with sour cream.

Philly Cheesesteak Pizza

Ingredients:

  • 8 ounces flank steak, halved lengthwise
  • 1 teaspoon black pepper, divided
  • Cooking spray
  • 12 ounces refrigerated fresh pizza dough
  • 1 tablespoon cornmeal
  • 2 teaspoons olive oil
  • 1 1/3 cups vertically sliced onion
  • green bell pepper, cut into strips
  • orange bell pepper, cut into strips
  • garlic cloves, thinly sliced
  • 1 1/2 teaspoons lower-sodium soy sauce
  • 1/2 cup 1% low-fat milk
  • 1 tablespoon all-purpose flour
  • 2 ounces reduced-fat extra-sharp cheddar cheese, shredded (1/2 cup)
  • 1/4 teaspoon onion powder
  • 1/8 teaspoon salt
  • 1/8 teaspoon ground red pepper

Directions:

  1. 1. Place a pizza stone or heavy baking sheet in oven. Preheat oven to 500° (keep stone or baking sheet in oven).
  2. 2. Heat a large cast-iron skillet over medium-high heat. Sprinkle steak with 1/2 teaspoon pepper. Coat pan with cooking spray. Add steak to pan; cook 4 minutes on each side or until desired degree of doneness. Remove from pan; let stand 5 minutes. Cut steak across the grain into very thin slices.
  3. 3. While steak cooks, place dough in a medium microwave-safe bowl coated with cooking spray. Cover and microwave at MEDIUM (50% power) for 45 seconds. Let stand 5 minutes. Roll dough into a 14-inch circle on a floured surface; pierce liberally with a fork. Carefully remove pizza stone from oven, and sprinkle with cornmeal. Arrange dough on pizza stone. Bake at 500° for 10 minutes or until browned and crisp.
  4. 4. While crust bakes, return skillet to medium-high heat. Add oil; swirl to coat. Add onion and bell peppers; sauté 3 minutes. Add garlic; sauté 2 minutes. Add steak; sauté 30 seconds or until thoroughly heated. Remove from heat; stir in remaining 1/2 teaspoon black pepper and soy sauce. Arrange steak mixture over crust.
  5. 5. Combine milk and flour in a 4-cup glass measuring cup; stir with a whisk until smooth. Microwave at HIGH 2 minutes or until thickened, stirring every 30 seconds. Stir in cheese and remaining ingredients. Drizzle cheese mixture over pizza. Cut into 8 wedges.

Penne Pasta Casserole

Ingredients:

12oz dry penne pasta, uncooked (12oz=3 cups)
1 pound ground sirloin beef
1 large onion, chopped
1 can (14.5oz) diced tomatoes with basil, garlic, and oregano, undrained
1 can (6oz) tomato paste
1/2 cup water
Non stick cooking spray
3 cups shredded mozzarella cheese

Directions:

1. Preheat oven to 350. Cook pasta according to package directions.
2. Brown meat with onions in a large skillet; drain. Stir in tomatoes with their liquid, the tomato paste and water; cook until heated through, stirring occasionally. Set aside.
3. Spray 13x9 baking dish with cooking spray. Drain pasta; place in large bowl. Add tomato mixture and 2 cups of the cheese; toss to coat. Spoon into prepared dish; sprinkle evenly with remaining 1 cup cheese.
4. Bake 20 to 25 minutes, or until casserole is heated through and cheese is melted.
