Tin Foil Hobo Dinner

Ingredients:

1 pound ground beef
4 potatoes, peeled and cubed
2 cups carrots, thinly sliced
1 onion, diced
Salt and pepper, to taste
Worcestershire sauce
BBQ sauce
Shredded cheddar cheese

Directions:

Use a large square piece of aluminum foil for each tin foil dinner.  Spray foil with nonstick cooking spray.  Separate ground beef into 4 equal patties and place in the center of each piece of foil.  Divide potatoes, carrots, and onion evenly between all 4 dinners and place on top of meat.  Sprinkle with salt and pepper, to taste.  Pour a few dashes of Worcestershire sauce on top of each dinner and fold foil up tightly around the entire meal.  Cook on a grill on medium-high heat or an open fire for 25-30 minutes, or until vegetables and meat are cooked through.  Open foil carefully and top with BBQ sauce and shredded cheese.

BBQ Chicken Salad

INGREDIENTS:

1 tablespoon olive oil
2 boneless, skinless thin-sliced chicken breasts
Kosher salt and freshly ground black pepper, to taste
6 cups chopped romaine lettuce
1 Roma tomato, diced
3/4 cup canned corn kernels, drained
3/4 cup canned black beans, drained and rinsed
1/4 cup diced red onion
1/4 cup shredded Monterey Jack cheese
1/2 cup shredded cheddar cheese
1/4 cup Ranch dressing
1/4 cup BBQ sauce
1/4 cup tortilla strips

INSTRUCTIONS:

Heat olive oil in a medium skillet over medium high heat.

Season chicken breasts with salt and pepper, to taste. Add to skillet and cook, flipping once, until cooked through, about 3-4 minutes per side. Let cool before dicing into bite-size pieces.

To assemble the salad, place romaine lettuce in a large bowl; top with tomato, corn, beans, onion and cheeses.

Pour Ranch dressing and BBQ sauce on top of the salad and gently toss to combine.

Serve immediately,topped with tortilla strips.

Monterrey Chicken

Ingredients:

4 boneless, skinless chicken breasts
1/4 cup BBQ sauce
1/4 cup real bacon bits
1 cup shredded cheese
1 (14oz) can rotel tomatoes, drained
Sliced green onions
Pepper

Directions:

Preheat oven to 400 degrees. Pound out chicken breasts to flatten. Season with pepper. Grill chicken until no longer pink and place on foil lined baking sheet. Top each chicken breast with one tablespoon BBQ sauce, 1/4 cup cheese, 1/4 cup tomatoes, green onions and one tablespoon bacon bits. Place in oven and bake until cheese is melted (about 5 minutes).

Easy BBQ Pulled Pork

Ingredients:

6 boneless center cut chops
1/2 cup water
Spices of your choice - I used Creole & black pepper
Sliced onions
Half bottle BBQ sauce of your choice

Directions:

Pour water and some BBQ sauce into slow cooker, stir well.

Place one layer of pork chops inside slow cooker. Put some BBQ sauce and onions on top of first layer, then add another layer of chops followed by more onions and sauce.

Cook 7 hours on low.

At the end of 7 hours you can pull the pork apart allow you desire. I used a fork & tongs and pulled it that away.

Slow Cooker Coke Chicken


Ingredients
  • 1 Fryer
  • 1 Lemon
  • 1 Onion
  • 1 Bottle BBQ Sauce
  • 1 Can Coca Cola
Instructions
  1. Peel onion and cut into quarters. Cut lemon into Quarters. Place fryer in crock pot. Toss in onion quarters and lemon quarters. Pour in entire bottle of BBQ Sauce and entire can of Coke. Cover and cook on low all day or high 3 to four hours.
