Ingredients

2 tablespoons paprika
2 tablespoons chili powder
1 tablespoon thyme
1 tablespoon garlic powder
1 tablespoon onion powder
2 tablespoons cayenne
1 tablespoon salt
2 tablespoon black pepper

Directions

This recipe should be seen as a base and can be tweaked depending on your liking. For instance, if you like a little more kick to your chicken, feel free to add a little more chili powder and cayenne to give it some heat. It can be simply made by combining all of the ingredients in a large mixing bowl. It can also easily be combined with a ¼ to a ½ cup of olive oil if you want to turn it into a paste so it will stick to your chicken. Rub it on any cut of chicken from wings, breasts, thighs or legs.

Oven Fried Okra

Ingredients:

16 oz bag frozen sliced okra, thawed {about 3 1/2 cups}
1 tsp Cajun or creole seasoning
1/2 tsp garlic salt
1 C yellow corn meal
Canola oil spray
1 gallon zip lock bag

Directions:

Preheat oven to 425 degrees. Turn the zip-lock bag inside out and spray with canola oil spray.

Pour the okra in the bag along with the Cajun seasoning and garlic salt. Seal bag and shake vigorously. Let rest for 10 minutes so the juices extract  from the okra.

Add the cornmeal to the bag and shake up again. Let rest 10 more minutes. Give the bag one more good shake. Pour okra over a strainer or colander {either over the sink or over a bowl} so the extra cornmeal will fall off. Spread the okra over a foil covered baking sheet and spread out evenly. Spray okra with canola oil spray.

Bake for 20 minutes, remove from oven, flip okra over, lightly spray again and return to oven for 20 more minutes. And that's it!

Taco Grilled Cheese

Ingredients

1 lb ground beef
1 (1.25 ounce) package taco seasoning mix
Frozen potato crowns (about 24)
8 slices American cheese
2 cups shredded Mexican cheese blend
butter (for spreading)
8 slices white bread

Directions

Step 1: In a medium skillet over medium high heat, brown ground beef. Drain off any excess liquid and stir in the package of taco seasoning and ¾ cup of water. Bring to a boil, reduce heat and simmer for 5 minutes (or until the ground beef is fully cooked), stirring occasionally. Meanwhile, cook the potato browns by either baking them in the oven or deep frying them according to package directions. Drain on paper towels (if deep frying).

Step 2: Pre-heat a skillet to medium high heat. Spread butter over one side of a slice of bread. Place butter side down into the skillet. Top with 2 slices American cheese, taco meat, potato crowns, and shredded Mexican cheese blend. Butter an additional slice of bread on one side and place it butter side up on top of the sandwich.

Step 3: Cook in the skillet until lightly browned on the bottom and flip over. Continue cooking until the other side has browned and the cheese has melted. Repeat with remaining sandwiches.

Healthy Mexican Casserole

INGREDIENTS

2 red bell peppers
2 green bell peppers
1 jalapeno or 2 chipotle peppers (optional - just for more kick)
½ red onion
2 cups frozen corn
2 teaspoons chili powder
2 teaspoon cumin
salt to taste (about 1 teaspoon is a good ballpark measure)
2 cups Mexican cheese (mine was a Sargento blend)
18-20 corn tortillas
1 can refried beans
2 cups red enchilada sauce
cilantro, guacamole, or sour cream for garnishments.

INSTRUCTIONS

Roast the veggies: Dice the peppers and mince the onions. Heat a large nonstick skillet with NO oil over high heat. Add the onion and peppers, sprinkle with chili and cumin, and do not stir. This allows the peppers to roast and brown on the outside. After a few minutes, give the pan a shake or stir and let the peppers sit again for a few more minutes without stirring. Remove and set aside. Repeat the roasting process with the corn, sprinkling with chili and cumin, removing from the heat when browned and roasted on the outside. Sprinkle the roasted veggies with a little bit of salt and toss to coat.

Prep the ingredients: Grease a 9x13 inch baking pan and preheat the oven to 400 degrees. Cut the tortillas into thin strips. Put the refried beans in a bowl and mix with a little bit of water to make them easier to spread.

Assemble: Spread a little bit of sauce on the bottom of the pan. Layer in order: half of the tortilla strips, ALL the beans, half of the veggies, half of the sauce, half of the cheese. Cover with the other half of the tortilla strips, veggies, sauce, and cheese.
Bake: Cover with foil (I usually spray mine with cooking spray) and bake for 15-20 minutes, until the sauce is bubbling and the cheese is melted. Serve with guacamole, fresh cilantro, sour cream, or anything in the world that you want.

Firecracker Chicken

INGREDIENTS

¼ cup canola oil
4 boneless skinless chicken breasts

¼ teaspoon red pepper flakes

INSTRUCTIONS

Preheat oven to 325 degrees. Cut chicken breasts into bite-sized pieces and season with salt and pepper.

In a medium sized mixing bowl, buffalo sauce, brown sugar, apple cider vinegar, water, salt and red pepper flakes. Pour over chicken and bake for 1 hour.

Homemade Chocolate Cream Pie

Ingredients:

½ c. cocoa
¼ cup cornstarch/or arrowroot powder (or ½ c. all purpose flour)
3 egg yolks
1 ½ c. sugar
¼ tsp. salt
2 c. milk

Directions:

Mix cocoa, cornstarch, beaten egg yolks; sugar and salt, then add milk gradually, while stirring in a pot over med-high heat. Cook until thick, beating it smooth. Cream pies take some time to thicken, so stir... and stir (10-15 min). Using a heavy bottom pan really helps. Just keep it up until it thickens. Pour into a pre-baked pie shell. Put in the fridge to chill, add whipped cream if you like, Or use the left over egg whites for a meringue topping!

Easy Pie Crust

Ingredients:

2 1/2 cups All-Purpose Flour
1 1/3 cups Shortening
1 1/2 teaspoons Salt
1/2 cup Water
6 Tablespoons All-Purpose Flour

Directions:

Combine the 2 1/2 cups flour, shortening, and salt, in a bowl and blend with a fork until it forms pea sized crumbs. In a small container with a lid combine 6 Tablespoons flour and 1/2 cup water and shake until combined.

Pour onto the shortening mixture and gently combine. Be GENTLE. The more you work the dough the tougher it gets. Form into a ball and lay on a floured surface.

Cut into 4 pieces. You will have enough dough for the top and bottom of 2 pies. Take one of the quarters and roll it into a ball and then flatten it with your palm. Flour the top and start rolling from the middle, turning a quarter turn with each roll.

Don’t hesitate to sprinkle your surface or the top of your dough with more flour so it doesn’t stick. When it is about 12 inches in diameter place the dough over the rolling pin and lay onto your pie dish.
For one pie crust cut and crimp the edges and and poke holes in the bottom with a fork. Bake at 400 degrees for 12-15 minutes, or until the edges are golden brown.

For a double crust, put in the filling before cutting the edge of the bottom crust. Water you fingers and wet the edge of the bottom crust slightly. Place on the top crust, cut the extra and crimp the dough all the way around. Make steam holes in the top, sprinkle with sugar, and bake at 375 degrees on a metal cookie sheet(it helps to cook the bottom crust), for 50-60 minutes. The crust should be slightly browned and the filling should be bubbling through the steam holes.

Homemade Honey White Bread

INGREDIENTS

1 cup warm water (sometimes I need more or less)
1 tablespoon olive oil
1 egg
3½ cups flour
1 teaspoon salt
2 teaspoons yeast
½ cup honey or sugar

INSTRUCTIONS

Mix all ingredients together in mixer with dough blade until dough forms. It should be dry enough to not be sticky but wet enough to not crumble.

Lift dough out of bowl, spray with olive oil (I spray the bowl) and place dough back in bowl covered with towel, allow to rise for 30-60 minutes.

Knead with dough blade (will deflate).
Remove from bowl, place dough on flowered surface and knead by hand a few times.

Divide in half.

Roll into 2 loaf shapes and place in loaf pans (mist pan with olive oil first).
Cover and allow to rise (depends upon temp in room, but usually around 60 minutes – it should be slightly over the top edge of the pan, do not allow to over-rise).

Bake at 350 for around 20-30 minutes or until golden brown on top. At around the 15 minute mark, I mist the top of the loaf with olive oil and continue cooking until done.

Tuna Croquettes

Ingredients:

2 cans tuna, well drained
1/2 small onion, minced
2 stalks celery, minced
1 c. bread crumbs, divided
2 eggs
1 t. paprika
1 t. salt
1/2 t. pepper
1/4 t. garlic powder
Oil

Directions:

1. In a large bowl, combine the tuna, onion, celery, 1/3 c. bread crumbs, eggs and seasonings. Stir until fully combined.
2. Pour remaining 2/3 c. bread crumbs into a shallow dish. Pat about a tablespoon worth of tuna mixture into a round patty. Cover both sides with bread crumbs.
3. Pour enough oil into a skillet to cover the bottom. Heat over medium heat. Add the breaded patties and cook until browned, about 3 to 4 minutes per side.

Our favorite dip to serve with these Tuna Croquettes is a simple sauce of mayonnaise and mustard. Use about 1 tablespoon of mustard for each 1/4 cup of mayonnaise. So simple but so good, and it is perfect with the tuna!

Also, this mixture tastes great formed into larger patties, fried as described above  and served on a bun as a tuna burger.

Philly Cheesesteak Sandwiches

SANDWICH INGREDIENTS

1 small onion, thinly sliced
1/2 of a green pepper, thinly sliced
4-6 ounces button mushrooms, sliced
salt, pepper for seasoning
1 and 1/4 pounds top sirloin steak
1-2 tablespoons canola oil or vegetable oil
4 soft hoagie rolls
8 White american cheese slices or 8 pepper-jack cheese slices
Mayo or chipotle mayo

CHIPOTLE MAYO INGREDIENTS

1/2 cup mayo
1 chipotle pepper in adobo sauce
1/2 tablespoon sauce from the adobo pepper can
1 tablespoon lime juice
Dash of salt
Dash of pepper

DIRECTIONS

1 hour before cooking, place steak in the freezer. When you’re ready to start cooking, pre-heat your oven to 400 degrees.

Melt 1 tablespoon butter in a large skillet over medium heat. Cook veggies until tender. While the veggies are cooking, remove the steak from the freezer and use a very sharp knife to slice the meat as thinly as possible against the grain.

When the veggies are done cooking, heat 1 tablespoon canola oil over medium high heat. Place 4 hoagie rolls in the oven for 5-7 minutes or until nice and warm, but not crunchy. Add half the meat to the pan and season with a bit of salt and pepper. Cook for a few minutes until it is cooked through. Set aside. Heat a bit more oil if needed and cook the other half of the meat, seasoning with salt and pepper.

Return the first batch of meat to the pan, stir in veggies if yo wish, and top with cheese. Use 8 pepper jack cheese slices for a spicy version, or 8 white American cheese slices for a classic version. Place the cheese over the meat and when it starts to melt, stir the cheese into the meat and veggie mixture.

Divide the meat among the 4 hoagie rolls. If using chipotle mayo, combine all ingredients in a blender (mayo, chipotle pepper, chipotle sauce, lime juice, salt and pepper) and slather desired amount on each roll. Otherwise spread a thin layer of regular mayo on the roll. Cut in half and serve immediately.

Heat oven to 400 degrees.   In a bowl, combine beef, bread crumbs, onion, and salt.  Gently press mixture into a 9-by-13-inch pan so that it makes one large patty of even thickness.  Use the tines of a fork to poke holes throughout the meat.  Bake for 30 minutes.  As it bakes, the meat will shrink away from the sides and liquid will accumulate around the edges of pan.  When fully cooked, remove the pan from oven (keep oven turned on) and carefully drain off the liquid.

Top the meat with an even layer of sliced cheese; return pan to oven for about 2 minutes or until the cheese melts.  Remove from the oven and allow to rest for a few minutes.  Cut into 2-inch squares (or the size of the buns used), making 12 mini- hamburgers.  Serve with dill pickle slices and ketchup.  Serves 6 at 2 sliders each.

Taco Spaghetti

Ingredients:

* 1 pound ground beef
* 1 packet taco seasoning
* 1 can black beans
* 1 to 2 cups frozen corn
* 1 can crushed or pureed tomatoes
* 1/2 pound whole wheat spaghetti

Directions:

Start by cooking ground beef in a large skillet.

Add a packet of taco seasoning.

Drain and rinse one can of black beans and add it to the skillet.

Add frozen corn.  You don’t need to thaw or pre-cook it in anyway.  It will heat up in the skillet with the other ingredients.

Add one can of crushed or pureed tomatoes.

And mix!

While this is happening, boil a pot of water and cook some whole wheat spaghetti.   You could also use regular spaghetti or even spaghetti squash.  And if you have some other kind of pasta at home,  use it!  Any noodle will work.

Cheesy Mexican Rice

Ingredients:

1 onion, diced
1 cup long grain rice
1 can Rotelle tomatoes, undrained
2 cups vegetable or chicken broth
2 tbsp olive oil
salt
shredded cheese - cheddar or Monterrey jack

Directions:

Heat oil on skillet or sauce pan over medium high heat.  Stir in onion and cook until translucent.  Add rice and stir frequently for 2-4 minute so grains don't burn.  Add tomatoes and mix to combine with rice.  Slowly add in broth and bring to a boil.  Cover and simmer on low for 20 minutes, mixing occasionally to prevent rice from sticking on the bottom of the pan.  Remove from heat, add salt for taste and fluff with a fork.  Let rice cool down for at least 5 minutes before serving.   Serve warm in individual bowls and drizzle with cheese on top so it melts.
